This New York strip steak is seasoned simply to let the meat shine. It only takes an hour to make and is perfect for a weeknight dinner!

- 4 New York Strip Steaks
- 2 tablespoons olive oil
- Kosher Salt
- Ground Black Pepper
- Garlic Powder
- Beef Rub (optional)
Instructions
- Preheat the pellet smoker to 225°F.
- Coat the New York strip steak with olive oil and then season with a steak rub made from black pepper, Kosher salt, and garlic.
- Arrange the steaks directly on the grill grates over direct heat and close the lid. Make sure there’s enough space between the steaks.
- Use a good meat thermometer to check the internal temperature periodically. Remove the meat from the heat once the desired temperature is reached (128 degrees F for medium rare).
- Remove the meat from the grill and tent it with aluminum foil.
- Crank the heat up to 500°F (or place in a piping hot cast-iron skillet) and reverse sear the steaks on each side for 1 to 2 minutes.
- Take the steaks off the heat and let them rest for 10 minutes. Resting will help lock in the juices.
- Place on the cutting board and slice against the grain. Pair your New York strip steaks with your favorite sides. Enjoy!
